Gretchen Gibbons
General Manager
Gretchen
is a junior in the Nutrition, Dietetics and Hospitality Administration program
at NIU. She has been an active member of the Student Dietetic Association (SDA)
since 2010. Gretchen has held several professional management positions which
will serve her well in her current position as General Manager. She is excited
to present the Southern cuisine of Twisted Soul to the guests.
Victoria Holeman
Executive Chef
Victoria
is a senior majoring in Hospitality Administration at NIU. She loves to provide
our guests with the experience of great food. As the executive chef, of Twisted
Soul at Ellington’s, she hopes to provide an appetizing meal in a healthy way.

Michelle
is a senior Hospitality Administration major with a Business and Journalism
minor. She is President of NIU's Professional Convention Management Association
(PCMA) chapter, as well as Vice-President of the Society of Hospitality
Administration (SHA). Michelle was the Executive Chef for last year’s SHA
Silent Auction and Dinner and is the Sous Chef of Twisted Soul at Ellington's.
She has loved to cook since she was a little girl, and continues to expand her
cooking horizons through this class.
R Emmett Ryan

Ryan is in his last year of the Nutrition and Dietetics program at NIU.
He is now the marketing manager for the Student Dietetic Association (SDA).
Ryan has received a Bachelor of Fine Arts from the University of Illinois at
Chicago in 2003. Ryan hopes to bring his love of art and food to new highs in
the offerings of Twisted Soul.
