My name is Emily Mekeel. I am a senior Nutrition and Dietetics major. Come next summer, I hope to be on my way to my Dietetic Internship. I love cooking, especially for other people, and one day I would like to publish a cookbook of my own recipes which I’ve already begun compiling. My future goal, as of now, is to eventually move to Seattle, become a certified CrossFit trainer, and drink the best coffee possible!
Hello, my name is Samantha Schneider and I am the Dining Room Manager at Sabor de Mexico! I am a senior, hospitality administration major. I love anything that gives me a creative challenge and have made it a priority to be as academically involved to expand fundamental l team and leadership skills along with a variety of experience within the hospitality field. I am the President of the Society for Hospitality Administration (SHA), an active member of the Professional Convention Management Association (PCMA), and participating in the hospitality administration mentor program. I am also the intern for the 2013 NIU Holmes Student Center Food Services, Bridal Expo, and am a server at Medinah Country Club where I will be working the Ryder Cup golf competition at the end of September. Upon graduation I hope to work my way into special events. My group and I have put in a lot of hard work and creativity when creating this menu and are very excited to share this flavorful Mexican cuisine with you!
Hi my name is Chris Leifel. I am the executive chef for Sabor de Mexico. I am in the Hospitality field, and after graduation I intend to be a chef in a fine dining restaurant. My other choice would be hospitality management or event coordinator. I love to cook and experiment with different cuisines.
Hello, my Name is Crystal Perez and I am the sous chef of Sabor de Mexico at Ellington’s. I am a nutrition and dietetics major with a minor in public health, and I plan on graduating spring 2014. Upon graduation, I hope to continue my academic career towards a master’s degree and one day becoming a registered dietitian. Nutrition and dietetics is my passion and I am excited to apply my knowledge to my job here at Ellington’s. I am excited to expand my knowledge through this course and immerse myself in different cultures and innovative ideas represented by each theme here at Ellington’s.

I am on the gymnastics team at NIU so I would like to stay involved with sports of some nature. I have also thought about working in a small café or restaurant. I love working with food and I feel that any opportunity I will have will be a great one. I am very excited to be working at Ellington’s and I cannot wait until our group gets to show everyone some real authentic Mexican food.
